Looking for a special breakfast? Here are two wonderful gluten-free recipes that are sure to please the entire family.
Quick Huevos Rancheros
Here is a quick delicious version of a favorite Mexican dish. Ingredients: 8 TBS of hot or mild salsa, or pico de gallo 2-4 pats of butter 1 TBS of Mexican cheese mix 8 small corn tortillas olive oil non-stick spray 1 1/2 cups of cooked black beans 4 eggs sea salt white pepper garlic powder 4 slices of lime fresh cilantro Instructions: Cook 4 eggs sunny side up. Lightly season with salt, garlic powder, and white pepper. Get a large frying pan and coat with non-stick olive oil. Take corn tortillas and spread thin layer of butter, sprinkle cheese over top and cover with another tortilla. Place in pan and heat over medium heat. Flip in about a minute and let heat on other side. Do this only long enough to melt cheese inside tortillas at least partially. Try to not let tortillas brown. In separate pots heat cooked black beans and salsa. Place tortillas on plate. Place 2 eggs, then beans followed by salsa over cheesy tortillas. Garnish with fresh cilantro and lime slice. Serves 4.
Scrambled Eggs with Vegetables
This is a simple recipe that I sometimes use just to change up my scrambled eggs.So easy and yet quite delicious. Ingredients:2-3 eggs 1/2 tomato, cut in small wedges 1/8 cup of sliced mushroom 1/8 cup of onion, thinly sliced 1 TBS of olive oil sea salt white pepper parsley Instructions: In a large skillet add mushroom and onion. Saute until onion becomes translucent. Then add stirred eggs, sea salt, and white pepper. When eggs are about one minute away from done add tomato wedges. Cook about another minute and serve.A quick delicious breakfast for one.
