Gluten-Free Information

Gluten-free information is now being sought by an ever larger number of people.

The reason for this is obvious. More people are becoming aware of the link to gluten sensitivity or allergy and digestive problems.

So what is gluten?

Gluten is the combination of two proteins glutenin and gliadin, and any food that contains both proteins is a gluten containing food.

Some of us have difficulty breaking these proteins down and it then causes stress to our digestive systems.

Some individuals are actually allergic to gluten.

Regardless of which category one belongs avoiding gluten becomes a necessity.

Gluten Containing Foods

Gluten is present in many foods especially in most grains including:

  • wheat,
  • spelt,
  • barley,
  • triticale,
  • rye,
  • kamut,
  • and oats
  • mostly due to cross contamination.

    Likewise, any product that contains flour from these grains are also gluten containing foods.

    This would include: bread, pasta, crackers, cakes, biscuits, waffles, pancakes, muffins, pies and anything that is made with the above mentioned flours.

    Additionally, some processed foods like gravies and sauces use wheat flour as a thickening agent.

    Those with an allergy or sensitivity to gluten are recommended to avoid these foods as well.

    When buying processed foods, gluten sensitive individuals are best advised to always look for products that are labeled gluten-free or gf.

    These steps will either dramatically reduce or eliminate your exposure to gluten.

    One food that I would caution anyone with a digestive weakness to be aware of is brown rice.

    Intolerance of this whole grain may be due to it containing one of the gluten proteins - glutenin.

    Or it could be that the fiber in brown rice is somewhat harsh making it stressful to our digestive lining.

    Another food to consider as a possible source is vinegar. While most vinegars are GF some that are made with malt may contain it. So use do not use malt vinegars.

    Gluten-Free Foods

    Gluten-free foods are those foods which do not contain the two proteins glutenin or gliadin.

    Some people mistakenly believe that eating GF will leavethem with nothing to eat. As you will see on the below list the food choices are numerous.

    All unprocessed meats: beef, veal, chicken, turkey, buffalo, pork, venison, goat, duck, eggs, mutton, and seafood.

    Be aware that some processed meats may contain small traces of gluten.

    Grains: Basmati and jasmine white rice and corn are an excellent starting points. Quinoa, buckwheat, teff, millet, and amaranth are also free of gluten.

    Pasta: Quinoa, corn, brown rice, buckwheat, but remember my warning on brown rice.

    Mixes: All GF mixes, Bob's Red Mill, Pamela's, Glutino, Schar, Orgran, plus many more!!!

    Flours: White rice, brown rice, amaranth, sorghum, corn, almond, buckwheat, garbanzo and fava bean, millet, potato, xantham and guar gums.

    Breads: All gluten-free products and mixes.

    Pizza Crusts: All GF products and mixes.

    Desserts: All GF mixes and recipes.

    Legumes: All are GF in natural form. Soy sauce, Tamari, and miso products frequently contain some gluten.

    When prepared bean dishes are processed and put in cans they may add a little gluten as a thickening agent.

    Vegetables: Safe in their natural form. Of course beware of breaded vegetables.

    Fruit: Safe in natural form.

    Beverages: High quality water is best, tea, seltzer water, club soda, most alcohol (except beer, ale, and whiskey), coffee, fruit and vegetables juices are also safe.

    It should be noted though that coffee and alcohol are health-building beverages and should only be used by those who are healthy.

    Fats: Butter, fats, and oils are safe.
